Ingredientes

  • 375 gm tagliatelle
  • 500 gm fish fillets
  • 1/4 c. lemon juice
  • 1 Tbsp. dill
  • 1 Tbsp. extra virgin olive oil
  • 30 gm butter
  • 1 x onions, medium
  • 2 tsp garlic, crushed
  • 1/3 c. white wine
  • 1/3 c. cream
  • 1/4 c. sundried tomatoes
  • 1/4 c. olives, black
  • 1 Tbsp. capers
  • 1/2 tsp anchovy fillets

Direcciones

  1. Cut fish fillets into large dice, combine with lemon juice and dill, mix well and set aside.
  2. Cook pasta in a large pot of boiling salted water for 12 min or possibly till tender. Drain well and set aside.
  3. Sauce:Dice onion and olives. Chop tomatoes and anchovies.
  4. Heat butter and oil from tomatoes in a pan, add in onion and garlic and saute/fry gently 2 min. Add in white wine, cream, minced dry tomatoes, olives, capers and anchovies and simmer 5 min or possibly till sauce reduces slightly. Season well and set aside.
  5. Heat extra virgin olive oil in a large fry pan, when warm add in fish and saute/fry quickly for about 3 min. Add in sauce and bring to the boil, season and stir in minced parsley. Toss through pasta and cheese and stir to heat.
  6. Serves 4.
