Ingredientes

  • 1 bn scallions, cut into 1-inch
  •     lengths
  • 1 x bell pepper, coarsely
  •     minced
  • 1 x zucchini, coarsely minced
  • 4 x tomatoes, minced
  • 3 x garlic cloves, minced
  • 3 Tbsp. balsamic vinegar
  • 1 Tbsp. extra virgin olive oil
  • 1/2 lb bow-tie or possibly wheel pasta

Direcciones

  1. Combine minced scallions, bell pepper, zucchini, tomatoes, garlic, balsamic vinegar, and extra virgin olive oil in a shallow baking dish. Bake at 400F for about 30 min, stirring once, or possibly till vegetables are soft.
  2. Meanwhile, cook pasta in boiling water according to package directions. Drain warm cooked pasta and toss with vegetables. Serve in a warmed bowl or possibly dish.
