%20and%20tried%20not%20to%20roll%20my%20eyes%20in%20disgust.%20How%20can%20this%20possibly%20taste%20good,%20I%20thought.%20There's%20hardly%20anything%20in%20it!%3C/p%3E%3Cp%3EMy%20reaction%20seems%20silly%20now%20when%20I%20think%20back.%20At%20the%20time,%20I%20considered%20myself%20an%20adventurous%20eater.%20I%20didn't%20have%20a%20problem%20eating%20escargot%20(snails)%20or%20ceviche%20(fish%20%22cooked%22%20by%20the%20acid%20of%20lemon%20and%20lime%20juices).%20But%20I%20was%20turning%20my%20nose%20up%20at%20these%20%22normal%22%20ingredients%20he%20was%20about%20to%20put%20together%20for%20dinner.%3C/p%3E%3Cp%3EBoy,%20was%20I%20proven%20wrong.%20Not%20only%20was%20the%20dish%20delicious,%20it%20became%20one%20of%20my%20favorites.%20When%20I'm%20craving%20pasta%20that's%20fairly%20light%20but%20big%20on%20flavor,%20pasta%20with%20sausage%20and%20peas%20is%20my%20choice.%3C/p%3E%3Cp%3ESo,%20a%20couple%20of%20weeks%20ago%20(with%20the%20aforementioned%20culinary%20experience%20under%20my%20belt)%20when%20Tom%20pulled%20out%20an%20old%20recipe%20he'd%20cut%20out%20of%20a%20magazine%20years%20earlier%20and%20said,%20%22I'm%20going%20to%20try%20this%20dish,%22%20I%20said,%20%22Go%20for%20it.%22%3C/p%3E%3Cp%3EPasta%20with%20Sausage,%20Onions%20&%20Fennel%20is%20a%20recipe%20from%20Cooking%20Light%20magazine.%20I%20only%20know%20that%20because%20on%20the%20back%20of%20the%20torn%20magazine%20page%20in%20a%20separate%20article%20it%20says,%20%22Cooking%20Light.%22%20I%20couldn't%20find%20the%20recipe%20on%20the%20Cooking%20Light%20website,%20but,%20guessing%20from%20the%20yellowing%20magazine%20page,%20the%20recipe%20is%20several%20years%20old.%3C/p%3E%3Cp%3EThe%20original%20recipe%20calls%20for%201/4%20cup%20of%20tomato%20paste,%20which%20Tom%20eliminated%20and%20added%20white%20wine%20instead%20and%20reduced%20the%20pasta%20cooking%20water%20by%20half.%20He%20also%20added%20the%20butter%20at%20the%20end%20to%20finish.%3C/p%3E%3Cp%3EThis%20recipe%20is%20so%20good.%20It's%20light,%20but%20quite%20filling%20and%20comforting.%20The%20sauce%20is%20not%20thick,%20but%20lighter%20and%20thinner%20than%20the%20usual%20pasta%20sauce%20and%20full%20of%20flavor.%3C/p%3E%3Cp%3EIf%20you've%20never%20used%20or%20tasted%20fennel,%20this%20would%20be%20a%20great%20recipe%20to%20try.%20The%20light%20anise%20flavor%20gives%20a%20real%20brightness%20to%20this%20dish.%3C/p%3E%3Cp%3EPasta%20with%20Sausage,%20Onions%20&%20Fennel%3C/p%3E%3Cp%3EAdapted%20from%20Cooking%20Light%20Magazine%3C/p%3E%3Cp%3ETrim%20fennel,%20reserving%20fronds%20and%20bulb.%20Cut%20fennel%20bulb%20in%20half%20lengthwise;%20cut%20each%20bulb%20half%20lengthwise%20into%20(1/4-inch-thick)%20slices.%20Cut%20bulb%20slices%20into%202-inch-long%20pieces.%20Chop%20fennel%20fronds%20to%20measure%201/3%20cup.%3C/p%3E%3Cp%3EBring%206%20quarts%20water%20and%202%20teaspoons%20of%20salt%20to%20a%20boil%20in%20a%20large%20stockpot.%20Stir%20in%20pasta;%20partially%20cover,%20and%20return%20to%20a%20boil,%20stirring%20frequently.%20Cook%208%20minutes%20or%20until%20the%20pasta%20is%20almost%20al%20dente,%20stirring%20occasionally.%20Drain%20pasta%20in%20a%20colander%20over%20a%20bowl,%20reserving%201%20cup%20cooking%20water.%3C/p%3E%3Cp%3EWhile%20pasta%20cooks,%20heat%20oil%20in%20a%20large%20Dutch%20oven%20over%20medium-high%20heat.%20Remove%20sausage%20from%20casings.%20Add%20sausage%20to%20Dutch%20oven;%20cook%202%20minutes%20or%20until%20lightly%20browned,%20stirring%20to%20crumble.%20Push%20sausage%20to%20one%20side%20of%20pan.%20Add%20onion%20to%20open%20space%20in%20pan;%20cook%201%20minute%20or%20until%20onion%20begins%20to%20soften.%20Stir%20onion%20into%20sausage.%20Push%20onion%20mixture%20to%20one%20side%20of%20the%20pan.%20Add%20fennel%20bulb%20to%20open%20space%20in%20pan;%20cook%201%20minute%20or%20until%20fennel%20begins%20to%20soften.%20Stir%20fennel%20into%20onion%20mixture.%20Stir%20in%20the%20red%20pepper%20flakes%20and%201/4%20teaspoon%20salt;%20cook%202%20minutes.%3C/p%3E%3Cp%3EAdd%20reserved%201%20cup%20of%20the%20pasta%20cooking%20water%20and%20the%20wine%20to%20the%20pan,%20stir%20to%20combine;%20bring%20to%20a%20boil.%20Reduce%20heat,%20and%20simmer%206%20minutes%20or%20until%20fennel%20is%20tender.%20Add%20the%20butter,%20fennel%20fronds%20and%20pasta;%20cook%202%20minutes%20or%20until%20pasta%20is%20al%20dente,%20tossing%20to%20combine.%20Remove%20from%20heat;%20stir%20in%20cheese.%20Serve%20immediately.%3C/p%3E){kind=link}
