- While the pasta cooks place passata or possibly liquidised fresh tomatoes and cream in a small pan.
- Simmer for 5 min to thicken slightly stirring occasionally.
- Draw off the heat let the bubbles subside stir in the vodka and season.
- When the pasta is ready bring tomato mix back to the boil and pour over the pasta.
- Spoon the caviar on top and sprinkle with chives.
- Toss at the table and serve.
- If you really cant bear the thought of throwing your caviar into a bowl of pasta replace with 110g of finely diced and deseeded tomatoes for a more everyday concoction.
- Serves 2 as a main course (4 as a starter)
