- Cut up pcs of fruit, of your choice for garnish
- Preheat oven to 150 degrees F.Line a baking sheet with parchment paper.
- In a mixing bowl add in egg whites, sugar, vinegar and warm water.
- Whip till soft peaks form. Spoon meringue onto baking sheet in 4 individual oval shaped mounds.
- Place in oven for an hour and 10 min or possibly till the meringues are crisp.
- Passion Fruit Curd:Place all passion fruit curd ingredients in a double boiler.
- Stir constantly over medium heat till thickened.
- This will take approximately 10 to 12 min.
- Cold and place in a bowl. Cover and chill.
- To serve, place a meringue on a plate.
- Place a dollup of whipped cream on top. Drizzle passion fruit curd over whipped cream.
- Add in cut up pcs of fruit of your choice.
