%20%20needs%20no%20special%20introduction%20to%20any%3C/p%3E%3Cp%3EMalayalee.%20It%20is%20a%20deep%20fried%20fritter%20made%20with%20ripe%20plantains.%20As%20the%20fritter%20is%20made%20with%20Ripe%20plantain%20or%20Ethapazham%20(pronounced%20-%20Etha%20Param)%20,%20it%20is%20also%20called%20as%20Ethakapoli%20by%20few.%3C/p%3E%3Cp%3EMy%20mom%20used%20to%20make%20this%20quite%3C/p%3E%3Cp%3Eoften%20when%20we%20were%20kids,%20but%20do%20you%20know%20when%20I%20actually%20started%20to%20love%20and%3C/p%3E%3Cp%3Ecrave%20for%20this%20tea%20time%20snack?%20During%20my%20college%20days%20and%20stay%20in%20hostels.%3C/p%3E%3Cp%3EAfter%20a%20long%20and%20exciting%20day%20in%20college,%20my%20main%20motto%3C/p%3E%3Cp%3Ewould%20be%20to%20get%20back%20to%20ladies%20hostel%20before%20the%20evening%20snacks%20got%20over%20;-P%3C/p%3E%3Cp%3EIn%20the%20hostel%20canteen,%20they%20would%20just%20cut%20a%20whole%20ripe%20plantain%3C/p%3E%3Cp%3Ein%20half%20and%20dip%20them%20in%20maida%20batter%20and%20fry%20them%20until%20golden%20brown.%20I%20guess%3C/p%3E%3Cp%3Emore%20than%20the%20fritters%20I%20guess%20it%20was%20size%20of%20the%20fritters%20that%20allured%20me%20:-)%20%20I%20mean%20,%20my%20mom%20never%20served%20a%20plantain%20fritter%3C/p%3E%3Cp%3Ethat%20was%20half%20the%20banana%20itself!!%20The%20only%20downside%20was,%20we%20were%20allowed%20to%20take%3C/p%3E%3Cp%3Eonly%20One%E2%80%A6so%20our%20next%20mission%20would%20be%20to%20wait%20till%20everyone%20finishes%3C/p%3E%3Cp%3Etheir%20tea%20and%20snack%20and%20hope%20for%20leftovers,%20thankfully%20by%20now%20my%20friends%20would%3C/p%3E%3Cp%3Ealso%20join%20in%20the%20waiting%20:-P%3C/p%3E%3Cp%3EPazhamPori%20with%20some%20sweet%20elaichi-ginger%20Tea%20is%20my%20absolute%20favorite%20way%20of%20having%20an%20evening%20snack%20and%20a%20few%20weeks%20back%20when%20I%20saw%20some%20super%20ripe%20and%20huge%20plantains%20at%20our%20downtown%20farmers%20market%20I%20had%20to%20grab%20a%20few.%20And%20I%20din%E2%80%99t%20have%20to%20think%20twice%20as%20to%20what%20I%20wanted%20to%20make%20with%20them.%3C/p%3E%3Cp%3EMildly%20chewy%20on%20the%20outside,%20soft%20and%20sweet%20on%20the%20inside%20and%20golden%20brown,%20there's%20nothing%20you%20won't%20love%20about%20this%20snack%20and%20it's%20a%20fried%20snack%20I%20(we)%20don't%20mind%20enjoying%20anytime!%20And%20if%20your%20plantain%20is%20super%20ripe,%20then%20they%20literally%20melt%20in%20your%20mouth%20like%20how%20mine%20were.%20Delicious!%3C/p%3E%3Cp%3EMummy%20still%20doesn't%20prefer%20serving%20up%3C/p%3E%3Cp%3Ehalf%20a%20plantain%20as%20a%20fritter,%20so%20I%20had%20to%20cut%20them%20up%20into%20small%20pieces%E2%80%A6oh%3C/p%3E%3Cp%3Ewell,%20just%20eat%20few%20extra%20pieces%20and%20that%E2%80%99ll%20make%20your%20half%20plaintain%20:-P%3C/p%3E%3Cp%3EAnd%20as%20it%20was%20made%20on%20a%20lazy%20weekend%20evening%20and%20my%20lil%E2%80%99Appu%3C/p%3E%3Cp%3Ewas%20happily%20sleeping,%20I%20took%20few%20step-wise%20pics%20as%20well.%20Ahem!%20those%20glasses%20are%20my%20dad%E2%80%99s,%20borrowed%20for%20my%3C/p%3E%3Cp%3Equick%20little%20photoshoot%20%20;-)%3C/p%3E%3Cp%3EHere's%20a%20pictorial%20on%20how%20I%20made%20these:%3C/p%3E%3Cp%3EPeel%20and%20cut%20the%20ripe%20plantain%20however%20you%20like.%3C/p%3E%3Cp%3EInto%20a%20wide%20bowl%20add%201%20cup%20of%20all-purpose%20flour.%20Then%20add%20a%20heaped%20tablespoon%20of%20rice%20flour%20(the%20rice%20flour%20adds%20a%20bit%20of%20crunch%20once%20fried)%3C/p%3E%3Cp%3EAdd%20some%20turmeric,%20sugar%20and%20salt.%20Add%20enough%20water%20to%20make%20a%20smooth%20batter.%3C/p%3E%3Cp%3EBatter%20shouldn't%20be%20lumpy%20and%20neither%20too%20thick%20nor%20too%20runny,%20just%20good%20enough%20to%20coat%20the%20plantain%20slices.%3C/p%3E%3Cp%3EFry%20the%20ripe%20plantain%20on%20both%20sides%20until%20they%20are%20nice%20and%20golden%20brown%20and%20mildly%20caramelized.%3C/p%3E%3Cp%3EPazhamPori%20(Ripe%20Plaintain%20fritters)%3C/p%3E%3Cp%3ERipe%3C/p%3E%3Cp%3Eplantain%20%E2%80%93%202%20large%20or%203-4%20small%20ones%3C/p%3E%3Cp%3EAll%3C/p%3E%3Cp%3E1.%20%20Peel%20and%20cut%20the%20ripe%20plantain.%20I%20cut%20them%20in%20half%20and%20then%20into%20thirds.%3C/p%3E%3Cp%3E2.%20%20In%20a%20wide%20bowl%20mix%20the%20All-purpose%20flour,%20Rice%20flour,%20Turmeric%20powder,%20Sugar%20and%20Salt%3C/p%3E%3Cp%3Ewith%20enough%20water%20to%20make%20a%20batter%20that%20isn't%20too%20thick%20nor%20too%20runny.%3C/p%3E%3Cp%3E3.%20%20Heat%20oil%20in%20a%20pan.%20Coat%20the%20ripe%20plantain%20slices%20on%20all%20sides%20with%20the%20batter%20and%20fry%20them%20until%20golden%20brown.%3C/p%3E%3Cp%3E1.%20%20If%3C/p%3E%3Cp%3Eyour%20plantain%20isn%E2%80%99t%20too%20ripe%20or%20sweet%20add%20more%20sugar%20to%20the%20batter%20mix%20(about%203-4%20tsp).%3C/p%3E%3Cp%3E2.%20%20You%3C/p%3E%3Cp%3Emay%20cut%20the%20plantain%20however%20you%20like%20,%20only%20make%20sure%20it%20is%20coated%20and%20fried%20well.%3C/p%3E%3Cp%3E3.%20%20You%3C/p%3E%3Cp%3Ecan%20deep%20fry%20if%20you%E2%80%99d%20l
