Hi everyone! My name is Tanya and I blog over at Lemons for Lulu. I’m so excited to be here today and to talk about one of my favorite foods: salsa.
I love Cinco De Mayo. What other holiday is it totally acceptable to indulge yourself in guacamole and margaritas? Not only is it acceptable, it’s mandatory!!! Now I’m sure Cinco De Mayo is really about more than just food and drinks, much like the 4th of July is more than just BBQ’s and beer. But, let’s be honest, the food IS downright fun!
My favorite food group is hands down snack food. I could make a meal out of chips and salsa, in fact, I often do. What’s better than salsa is homemade salsa! It is so easy to chop a few veggies, toss them into a bowl and there you go, homemade salsa. This time of year is especially fun to make salsa, when so many fresh veggies are available.
This salsa comes from my love of combining a little sweet into savory foods. The peaches add just the right amount of sweetness to the spicy jalapeño in this salsa. It makes it taste especially fresh and pairs perfectly with the balsamic vinegar.
Yes friends, get ready to raise your margarita glasses, grab a huge bag of tortilla chips and dig into this fresh salsa! The perfect way to spend your Cinco De Mayo!
Peach and Tomato Salsa
Ingredients
- 3 cups seeded fresh tomatoes chopped
- 2 peeled peaches, diced
- 1 small jalapeno diced
- 1 whole avocado, diced
- 1/2 cup cilantro, coarsely chopped
- ¼ teaspoon salt
- 2 teaspoons balsamic vinegar
Instructions
Combine tomatoes, peaches, and jalapenos in a bowl. Stir in cilantro and salt. Drizzle with vinegar, toss to coat. Serve immediately.
