Peach Glazed Chicken Breasts

Ingredientes

  • 1/3 c. Orange Juice
  • 1 tsp Cornstarch
  • 4 x Skinless Boneless Chicken Breast Halves
  • 1/4 tsp Salt
  • 1/8 tsp Pepper
  • 1 tsp Extra virgin olive oil
  • 1 x Clove Garlic Chopped
  • 1/4 c. peach preserves Spreadable Fruit
  • 1 tsp fresh ginger root grated, optional not in original recipe
  • 2 c. Frzn Peach Slices
  • 1 tsp Sugar

Direcciones

  1. In small bowl, combine orange juice and cornstarch; blend well. Set aside.
  2. Spray large nonstick skillet with nonstick cooking spray. Heat over med-high heat till warm. Sprinkle both sides of chicken breast halves withsalt and pepper; lace in warm skillet. Cook 2 - 3 minutes on each side or possibly untillightly browned. Remove chicken from skillet; cover to keep hot.
  3. Reduce heat to med. Add in oil and garlic to same skillet; heat 15 seconds.
  4. Don't BURN. Remove skillet from heat; add in cornstarch mix and spreadable fruit. Return to skillet to heat; blend well.
  5. Return chicken to skillet; add in peaches and sugar. Reduce heat; cover and simmer 14 - 18 minutes or possibly till chicken is fork-tender and juices run clear.
  6. Serve sauce over chicken.
  7. Makes 4 servings.
