Peanut-Butter Brownies
INGREDIENTS:
Brownies:
- 10 tablespoons butter-softened
- 1 cup cocoa powder
- 1/2 teaspoon salt
- 1 1/3 cups sugar
- 1 1/4 teaspoons vanilla
- 2 eggs-room temperature
- 2/3 cup flour
- 1 1/2 cups semisweet chocolate chips
- Peanut Butter Layer:
- 1 cup creamy peanut butter
- 4 tablespoons butter-room temperature
- 1 cup powdered sugar
- 1/4 teaspoon salt
- 1 1/4 teaspoons milk
- 1 teaspoon vanilla
- 1 1/2 cups salted cocktail peanuts
- Ganache:
- 2 cups semisweet chocolate chips
- 7 tablespoons butter
DIRECTIONS:
Preheat oven to 325 degrees.
For the brownies: In a large plastic mixing bow, melt the butter in the microwave until melted. Whisk in the cocoa powder, salt and sugar until the lumps are out and the sugar is dissolved. Line the bottom of a 9 x 13 baking dish with parchment paper, leaving 4 inches on either side to act as a sling. Spray with non-stick cooking spray. Stir in the vanilla. Add in the eggs, one at a time stirring well between each addition. Add in the flour and beat well. Fold in the chocolate chips. Spread the mixture into the baking dish and bake for 30-35 minutes. Cool completely.
For the peanut butter layer: Mix the peanut butter and butter in a stand mixer until smooth and fully incorporated. Slowly add in the powdered sugar and salt, scraping the sides as you go. Add the milk and vanilla and mix well. Evenly spread the peanut butter over the brownie layer. Scatter the peanuts over the peanut butter and press in so they are half buried in the peanut butter.
For the ganache: In a medium saucepan over low heat melt the butter and the chocolate chips, stirring constantly. Cool for 10 minutes then pour evenly over the peanuts and spread carefully. Chill in the refrigerator for at least 1 1/2 hours, cut and store in the refrigerator.
