I am still lamenting how summer blue skies, and warm temperatures has bypassed the Central Coast of California. My tomatoes aren't pleased, either. Then again, I've been reading tweets and blogs, from those of you who are melting in triple-digit temperatures-- so I have no right to complain. At least, with cooler weather, I haven no problem baking something in the oven. I have a wicked mean sweet tooth. I collect, by far, more dessert recipes than I do savory.
Baking is very therapeutic for me. Those who hate to measure are (in my own theory) those who say they hate to bake. I don't mind measuring ingredients. The problem is, I have minimal self-control when it comes to not eating what I bake.

%20those%20who%20say%20they%20hate%20to%20bake.%20%20I%20don't%20mind%20measuring%20ingredients.%20%20The%20problem%20is,%20I%20have%20minimal%20self-control%20when%20it%20comes%20to%20not%20eating%20what%20I%20bake.%3C/p%3E%3Cp%3EWhen%20I%20first%20spotted%20this%20recipe%20on%20%22How%20Sweet%20It%20Is%22,%20I%20almost%20skipped%20reading%20about%20it.%20%20Peanut%20butter,%20you%20see,%20isn't%20my%20favorite%20ingredient.%20%20Sure,%20a%20PBJ%20sandwich%20sounds%20great%20with%20homemade%20jam.%20%20I%20do%20enjoy%20a%20Reese's%20Peanut%20Butter%20cup%20treat%20every%20so%20often.%20Otherwise,%20peanut%20butter%20isn't%20something%20that%20triggers%20a%20food%20lust%20within%20me.%20%20My%20husband%20loves%20peanut%20butter,%20and%20so%20I%20decided%20to%20bake%20this%20treat%20just%20for%20him.%20(Selfishly,%20my%20plan%20was%20that%20I'd%20be%20able%20to%20resist%20these.)%3C/p%3E%3Cp%3EI%20don't%20own%20a%20double%20boiler.%20Usually,%20I%20set%20a%20bowl%20over%20a%20low-simmering%20pot%20of%20water.%20%20This%20worked%20out%20well,%20however.%3C/p%3E%3Cp%3EThe%20sauce%20thickened%20in%20about%20five%20minutes.%20%20It's%20divine,%20and%20it%20makes%20a%20lot%20more%20than%20you%20need%20for%20the%20batter.%20%20Vanilla%20ice%20cream%20would%20be%20excellent%20with%20this%20sauce...%3C/p%3E%3Cp%3EThe%20recipe%20directions%20doesn't%20say%20to%20strain%20the%20sauce,%20but%20I%20did%20anyway.%3C/p%3E%3Cp%3E15%20minutes%20of%20time%20invested,%20start%20to%20finish,%20I%20have%20hot%20fudge%20sauce.%20Do%20I%20hear%20an%20amen?%20%20Angels%20singing?%20%20This%20stuff%20is%20pretty%20good,%20I%20must%20say!%20%20I%20poured%20it%20into%20a%20squeeze%20bottle%20and%20now,%20for%20the%20cupcake%20batter--%3C/p%3E%3Cp%3EWe%20need%20flour,%20dark%20coco%20powder,%20melted%20butter,%20an%20egg,%20sour%20cream,%20pure%20vanilla%20extract,%20brown%20sugar,%20baking%20soda%20and%20salt.%3C/p%3E%3Cp%3EPreheat%20the%20oven%20to%20350F.%20I%20used%20my%20stand%20mixer,%20but%20I%20think%20this%20can%20easily%20be%20done%20by%20hand--%20with%20a%20whisk.%20%20Begin%20by%20mixing%20the%20brown%20sugar%20and%20egg,%20Add%20milk,%20cream,%20butter%20and%20vanilla,%20and%20mix%20until%20combined.%20Stir%20in%20sour%20cream.%20Sift%20dry%20ingredients%20together%20and%20then%20add%20to%20the%20wet%20mixture.%20Mix%20until%20batter%20is%20smooth,%20then%20swirl%20in%20fudge%20sauce.%3C/p%3E%3Cp%3ELine%20a%20muffin%20tin%20(12%20count)%20with%20liners%20and%20using%20a%20%C2%BC%20cup%20measure,%20add%20batter%20to%20each%20cup.%20(I%20use%20an%20ice%20cream%20scoop.)%3C/p%3E%3Cp%3EBake%20for%2015-18%20minutes.%3C/p%3E%3Cp%3EI%20got%2014%20cupcakes,%20and%20I%20discovered%20that%20once%20the%20batter%20sits%20for%2018%20minutes%20(second%20batch),%20these%20puffed%20up%20even%20higher.%20%20%20Just%20a%20side%20note.%20Let%20cool%20before%20frosting.%3C/p%3E%3Cp%3EOh%20yeah,%20frosting!%3C/p%3E%3Cp%3ECream%20butter%20and%20peanut%20butter%20together%20in%20the%20bowl%20of%20an%20electric%20mixer.%20Add%20powdered%20sugar%20with%20mixer%20on%20low%20speed%20and%20gradually%20add%20milk%20and%20vanilla%20extract.%20Add%20a%20pinch%20of%20salt%20and%20mix%20until%20frosting%20is%20smooth.%20If%20too%20thick,%20add%20more%20milk;%20if%20too%20thin,%20add%20more%20sugar.%20%20This%20is%20your%20basic%20buttercream%20frosting.%20%20Me,%20the%20Anti-Peanut%20butter%20lover%20took%20a%20taste.%20%20Sweet,%20but%20not%20cloyingly%20sweet.%20The%20peanut%20butter%20flavor%20there,%20but%20it%20didn't%20go%20%22Pow%22!%20%20Hmmm...%3C/p%3E%3Cp%3EFor%20years,%20I%20frosted%20cupcakes%20with%20a%20small%20butter%20knife.%20I%20think%20that's%20a%20royal%20pain,%20if%20you%20ask%20me.%20%20I%20like%20to%20pipe%20my%20frosting%20with%20a%20pastry%20bag.%20%20I%20use%20a%20Wilton%201M%20Star%20tip%20with%20a%20disposable%20bag.%20%20It's%20much%20easier%20to%20fill%20a%20pastry%20bag%20when%20you%20place%20it%20into%20a%20tall%20glass,%20then%20fold%20the%20top%20of%20the%20bag%20over%20it,%20like%20a%20cuff.%20%20Fill%20the%20bag,%20squeeze%20the%20top%20and%20squeeze%20over%20a%20bowl%20to%20remove%20any%20excess%20air.%20There!%20%20Now%20here's%20something%20cool%20I%20learned%20from%20%22How%20Sweet%20It%20Is%22...%20and%20it's%20sweet!%3C/p%3E%3Cp%3EPlunge%20the%20tip%20into%20the%20cupcake%20and%20squeeze,%20while%20lifting%20up...%3C/p%3E%3Cp%3EThere%20ya%20go!%20%20Frosting%20filled%20cupcakes.%20%20Easy!%3C/p%3E%3Cp%3ESqueeze%20and%20swirl%20the%20frosting...%20there!%20%20Quick%20and%20easy...%3C/p%3E%3Cp%3EA%20few%20jimmie%20sprinkles%20or%20some%20shaved%20chocolate%20would%20be%20pretty.%20But,%20we%20have%20that%20fudge%20sauce...%3C/p%3E%3Cp%3EThe%20squeeze%20bottle%20works%20well%20(but%20drizzling%20with%20spoon%20can%20work)...%20slowly...%3C/p%3E%3Cp%3ECome%20to%20mama!%3C/p%3E%3Cp%3EI%20like!%3C/p%3E%3Cp%3EThe%20chocolate%20cupcake%20recipe%20has%20some%20very%20stiff%20competition,%20because%20I%20am%20in-love%20with%20my%20Moist%20Chocolate%20Cake%20recipe.%20%20I%20don't%20like%20dry%20cupcakes...%20well,%20who%20does?%20How%20do%20you%20eat%20your%20cupcake?%20%20Do%20you%20pull%20off%20the%20bottom%20and%20put%20it%20on%20top--%20and%20eat%20your%20cupcake%20like%20a%20sandwich?%20Just%20curious...%20as%20that's%20how%20I%20do%20it.%20I%20want%20an%20even%20ratio%20of%20frosting%20to%20cake,%20you%20see.%3C/p%3E%3Cp%3EWell,%20look!%20%20I%20won't%20have%20to%20do%20that%20with%20this%20frosting%20technique%20%20I%20have%20frosting%20inside,%20and%20on%20top.%20%20Oh%20dear,%20my%20sweet%20tooth%20is%20throbbing%20and%20at%20full%20attention.%20%20I%20have%20to%20taste%20this...%3C/p%3E%3Cp%3EVERDICT:%20%20%20Oh,%20help%20me,%20Rhonda!%20%20The%20cake%20is%20incredibly%20moist.%20%20It's%20baby%20soft,%20and%20tender,%20and%20the%20chocolate%20flavor%20is%20spot%20on.%20%20The%20frosting--%20I'm%20toast.%20%20Really,%20this%20is%20not%20what%20I%20had%20planned%20expected.%20%20It's%20phenomenal.%20%20Seriously,%20I'm%20diggin'%20the%20peanut%20butter%20and%20chocolate%20combo.%20%20I'm%20in%20serious%20trouble,%20here.%20%20%20My%20plan%20to%20bake%20a%20resistible%20dessert%20was%20foiled.%20%20I%20took%20most%20of%20the%20cupcakes%20to%20the%20office%20and%20they%20were%20gone%20in%20a%20nano-second.%20%20I%20had%20some%20very%20happy%20peanut%20butter%20and%20chocolate%20lovin'%20co-workers.%20%20Winner!%3C/p%3E%3Cp%3EThis%20cupcake%20has%20altered%20my%20ho-hum%20attitude%20about%20peanut%20butter.%20%20Yes,%20I'd%20make%20this%20again...and%20again...but%20only%20for%20potlucks%20or%20bake%20sales.%20%20I%20can't%20have%20them%20in%20my%20kitchen,%20or%20I%20can't%20promise%20that%20I'd%20have%20any%20kind%20of%20self-control.%20%20You%20need%20these%20in%20your%20life.%20Even%20if%20just%20once...%3C/p%3E){kind=link}
