Peanut Potato Salad

Ingredientes

  • 3 lbs. boiling potatoes, peeled
  • 12 slices bacon, cooked & crumbled
  • 1 c. (5 ounce.) salted Spanish peanuts
  • 1 med. red bell pepper, minced
  • 2 stalks celery, minced
  • 4 green onions, minced
  • 1/2 c. fresh cilantro, minced
  • 1/4 c. fresh parsley, minced

Direcciones

  1. FOR SALAD: Bring large pot of water to boil over high heat. Add in potatoes and simmer till just tender, about 30 min. Drain and cold. Cut potatoes into 1/2 inch cubes. Combine potatoes, bacon, 1/2 c. peanuts, bell pepper, celery, green onions, cilantro, and parsley in large bowl.
  2. FOR DRESSING: Combine mayonnaise, peanut butter and vinegar in medium bowl. Whisk till smooth. Season with salt and pepper.
  3. Pour dressing over potato mix and toss gently till mixed. Cover and chill at least one hour. (Can be prepared 1 day ahead.) Garnish with remaining 1/2 c. peanuts and parsley. Serves 8.
