Pear Pudding (Budino Di Pera)

Ingredientes

  • 4 lrg Large eggs separated
  • 5 Tbsp. sugar
  • 1 Tbsp. grnd cinnamon
  • 2 lb D'Anjou pears peeled, stemmed,
  •     cored, seeded, and grated
  • 1 x lemon zested
  •     Unsalted butter to prepare pan
  •     Plain fresh bread crumbs

Direcciones

  1. Preheat the oven to 400 degrees.
  2. Beat the yolks with the sugar and cinnamon, then mix in the grated pears and lemon zest. Beat the egg whites to stiff peaks, and fold them into the fruit mix.
  3. Butter a pudding mold or possibly quiche pan and sprinkle with bread crumbs. Turn the fruit mix in to the pan and level with a spatula. Place the pan in a water bath and bake for 20 min, and serve cold or possibly cool.
  4. This recipe yields 6 servings.
