Pear, Rocket And Watercress Salad

Ingredientes

  • 1 bn Watercress
  • 3 x Handfuls rocket
  • 2 x Desert pears - peeled and cored
  • 6 x Spring onions
  • 4 x Radishes - thinly sliced
  • 30 gm Roasted and skinned walnut pcs, (1oz)
  • 1 x Lemon
  • 1 x Clove garlic
  • 4 Tbsp. Extra virgin olive oil
  • 2 Tbsp. Walnut oil
  • 1 tsp Caster sugar
  •     Freshly grnd salt and black pepper

Direcciones

  1. Prepare the dressing ahead of time for the flavours to develop and store in the fridge. Pare a strip of lemon zest, squeeze juice and place both in a bowl.
  2. Crush the garlic and add in to the lemon with the oils, sugar and seasoning.
  3. Whisk till blended and store.
  4. Wash and dry watercress and rocket, slice pears, radishes and spring onions. Add in the roasted walnut pcs and mix all together in a large bowl.
  5. Remove lemon zest from dressing. Drizzle dressing over salad and toss lightly. Serve in a pretty glass bowl.
