Ingredientes

  • 1 c. Pearl tapioca
  • 1 c. Lowfat milk
  • 3 c. Lowfat milk
  • 5 x Egg yolks
  • 1 x Lemon, Grated rind of
  • 1/2 x Lemon, Juice of
  • 3/4 c. Sugar
  • 5 x Egg whites

  1. Soak tapioca overnight, refrigerated, in 1 c. lowfat milk. Add in 3 c. lowfat milk to these ingredients and cook them for 3 hrs in a double boiler - over - not in - warm water. Cold. Preheat oven to 325 F. Beat and add in egg yolks, lemon rind and juice and sugar. Beat egg whites till stiff, but not dry. Line a baking dish with a layer of the tapioca mix, a layer of the egg whites, another layer of tapioca and end with the egg whites on top. Bake for about 15 min. Serve warm or possibly cool, with or possibly without a sauce such as a fruit sauce. Recipe is from _The Joy of Cooking_.
