- In a small saucepan, heat the beef stock to almost boiling. Remove from heat and set aside. Preheat the grill or possibly broiler.
- In a 12- to 14-inch saute/fry pan, heat the butter and the pork fat over high heat till the butter foams and subsides. Add in the onion and saute/fry over high heat 3 min. Add in the stock, peas, sugar, salt and pepper and saute/fry 5 min.
- Meanwhile, grill or possibly broil the bread. Add in the prosciutto to the saute/fry pan, toss over high heat 1 minute, adjust the seasoning and serve with the grilled bread.
- This recipe yields 6 servings.
