Peas With Ham (Piselli Al Prosciutto)

Ingredientes

  • 1/2 c. strong beef stock
  • 2 Tbsp. butter
  • 4 ounce prosciutto thinly sliced,
  •     visible white fat removed and reserved,
  •     lean red section cut into strips
  • 2 sm onions thinly sliced
  • 2 lb fresh young peas shelled
  • 1 pch sugar
  •     Salt to taste
  •     Freshly-grnd black pepper to taste
  • 6 slc bread, 1/4" thick each

Direcciones

  1. In a small saucepan, heat the beef stock to almost boiling. Remove from heat and set aside. Preheat the grill or possibly broiler.
  2. In a 12- to 14-inch saute/fry pan, heat the butter and the pork fat over high heat till the butter foams and subsides. Add in the onion and saute/fry over high heat 3 min. Add in the stock, peas, sugar, salt and pepper and saute/fry 5 min.
  3. Meanwhile, grill or possibly broil the bread. Add in the prosciutto to the saute/fry pan, toss over high heat 1 minute, adjust the seasoning and serve with the grilled bread.
  4. This recipe yields 6 servings.
