There are few things I love more than breakfast for dinner! And one of my all time favorite breakfasts is pancakes!! The basic recipe is simple (or use a pancake mix if you prefer), but the addition of the pecans is beyond words…
Pecan Pancakes
INGREDIENTS:
- 2 cups flour
- 3 tablespoons sugar
- 1/2 teaspoon salt
- 1 teaspoon baking powder
- 1/2 teaspoon baking soda
- 2 cups buttermilk
- 2 large eggs
- 1/4 cup butter, melted and cooled
- canola oil, for frying
- chopped pecans
DIRECTIONS:
Whisk the flour, sugar, salt, baking powder and baking soda together in a large bowl. Add the buttermilk, eggs and cooled melted butter to a second bowl and whisk to combine. Make a well in the center of the dry ingredients and add the wet mixture. Stir with a spatula just until combined (do no over mix or you will end up with tough and chewy pancakes).
Heat a large nonstick frying pan over medium heat. Add a few drops of the oil and once heated, drop about 1/4 cup of batter per pancake into the pan. Sprinkle chopped pecans on top. Cook until bubbles begin to form, about 3 minutes, flip and continue cooking until the second side is nice and golden brown, about 2 more minutes. Serve with another handful of pecans dropped over the top, and REAL Wisconsin maple syrup!
