Ingredientes

  • 2 Tbsp. bacon drippings or possibly vegetable oil
  • 1 x clove garlic, chopped
  • 1 sm onion, minced
  • 1 sm green pepper, minced
  • 1 x (16-oz) can tomatoes, including liquid
  • 1 x (16-oz) can chili beans, including liquid
  • 1 x (15 1/4 ounce.) can red kidney beans, including liquid
  • 2 tsp salt
  • 1 tsp sugar
  • 2 Tbsp. vinegar
  • 1/4 tsp grnd black pepper
  • 3 Tbsp. chili pwdr
  •     dash Tabasco sauce or possibly cayenne pepper
  • 1 lb lean grnd beef
  • 1/2 c. onion, minced
  • 1/2 c. cheddar cheese, grated

Direcciones

  1. Heat 1 Tbsp. of the bacon drippings in a large frying pan and saute/fry garlic till golden. Add in minced onion and green pepper. Cover pan and cook over low heat till onion is translucent/soft. Meanwhile, mash canned tomatoes in own liquid in a 4-qt saucepan or possibly Dutch oven, then add in chili beans and kidney beans, including the liquid. Add in salt, vinegar, pepper, chili pwdr, Tabasco sauce to beans and tomatoes and bring to simmer. Add in sauteed garlic, onion and green pepper. Reheat frying pan and saute/fry beef in remaining bacon drippings, stirring with a fork to crumble, till cooked. Drain off fat and add in beef to bean mix in saucepan. Simmer, uncovered, for about 45 min, stirring occasionally. Serve in bowls topped with minced onion and cheddar cheese. Accompany chili with saltine crackers or possibly warm buttered tortillas.
