Penne Pasta Soup With Tomatoes, Peppered Vodka And Cream

Ingredientes

  • 1/4 c. extra virgin olive oil
  • 1 x red onion thinly sliced
  • 2 x red bell peppers seeded, and
  •     thinly sliced
  • 1 x green bell pepper seeded, and
  •     thinly sliced
  • 4 x garlic cloves minced
  • 1/2 tsp crushed red pepper flakes
  •     Salt to taste
  •     Freshly-grnd black pepper to taste
  • 1 can minced plum tomatoes - (28 ounce) with their juice
  • 1 tsp sugar
  • 8 c. chicken stock or possibly broth
  • 12 ounce uncooked penne pasta
  • 1/4 c. pepper-flavored vodka
  •     (may substitute regular vodka)
  • 1 c. heavy (whipping) cream
  • 8 ounce thinly-sliced smoked salmon (optional)
  • 1/4 c. minced fresh parsley plus additional
  •     for garnish
  • 1 c. freshly-grated Parmesan cheese plus additional
  •     for garnish

Direcciones

  1. In a Dutch oven or possibly large pot over medium-high heat, heat the oil. Add in the red onion, bell peppers, garlic, red pepper flakes and salt and pepper to taste. Reduce the heat to medium and cook, stirring often to prevent the garlic from burning, for 3 to 4 min.
  2. Add in the tomatoes and sugar and simmer, uncovered, till the sauce begins to thicken, about 15 min.
  3. Add in the stock or possibly broth and pasta, bring to a boil and cook till the pasta is tender but not mushy, 8 to 10 min. Stir in the vodka. Add in the cream, salmon (if using), parsley and Parmesan and heat to a simmer.
  4. Ladle into individual bowls and, if you like, sprinkle with additional Parmesan and parsley. Serve immediately.
  5. This recipe yields 8 servings.
  6. Comments: We preferred this recipe without the salmon, but fish lovers might enjoy folding in some smoked salmon in the final stages.
