Ingredientes

  • 1 lb plum tomatoes quartered
  •     lengthwise, seeded, wedges halved
  • 5 Tbsp. extra virgin olive oil
  • 1 Tbsp. dry oregano
  • 12 ounce penne pasta
  • 6 sm portobello mushrooms (portobellini) dark gills removed,
  •     and caps sliced
  • 4 x green onions thinly sliced
  • 3 x garlic cloves chopped
  • 3/4 lb chicken tenders halved lengthwise,
  •     then halved crosswise
  • 1 c. crumbled feta cheese
  • 1 c. grated Parmesan cheese
  • 1/2 c. low-salt chicken broth
  • 1/4 c. dry white wine

Direcciones

  1. Preheat oven to 425 degrees. Combine tomatoes, 2 Tbsp. oil, and oregano in small bowl; toss to blend. Place tomatoes on baking sheet. Roast till beginning to dry and wrinkle, about 20 min.
  2. Meanwhile, cook pasta in large pot of boiling salted water till tender but still hard to bite, stirring occasionally. Drain pasta; let stand in colander.
  3. Heat 2 Tbsp. oil in same pot over medium-high heat. Add in mushrooms, onions, and garlic and saute/fry till mushrooms are tender and brown, about 10 min. Transfer mushroom mix to medium bowl.
  4. Heat remaining 1 Tbsp. oil in same pot over medium-high heat. Sprinkle chicken with salt and pepper. Add in chicken to pot and saute/fry till brown and cooked through, about 5 min.
  5. Add in mushroom mix and roasted tomatoes to pot. Add in penne, feta, Parmesan, chicken broth, and wine; toss till heated through and sauce coats pasta, about 4 min. Season to taste with salt and pepper.
