  • 1 Tbsp. extra virgin olive oil
  • 1 medium onion, thinly sliced
  • 4 garlic cloves,chopped
  • 2/3 c. dry white wine
  • 1 (14 1/2-oz) can diced peeled tomatoes, undrained
  • 1 c. heavy cream
  • 4 Tbsp. minced Italian parsley (flat leaf parsley)
  • 1 tsp. salt or possibly to taste
  • freshly grnd pepper to taste
  • 1 lb. penne pasta, cooked according to package
  • 1 c. freshly grated Parmesan cheese, plus additional for garnish
