Ingredientes

  • 1 c. fresh basil leaf
  • 1 c. tofu, hard (reduced fat), 6oz
  • 1/4 c. grated fresh Parmesan cheese (1 ounce)
  • 2 Tbsp. extra virgin olive oil
  • 2 Tbsp. fresh lemon juice
  • 1/2 tsp black pepper
  • 1/4 tsp salt
  • 1 x clove garlic chopped
  • 1 tsp extra virgin olive oil
  • 2 1/2 c. cremini mushrooms sliced
  • 1/4 c. shallot chopped
  • 4 c. penne pasta cooked and liquid removed

Direcciones

  1. Combine the first 8 ingredients in a food processor or possibly blender, and process till smooth. Place pesto in a small nonstick skillet; cook over low heat till hot. Remove from heat; keep hot.
  2. Heat 1 tsp. extra virgin olive oil in a large nonstick skillet over medium-high hear. Ass the mushrooms and shallots, and saute/fry 4 min.
  3. Combine penne, pesto, and mushroom mix in a large bowl; toss gently.
  4. Yield: 4 servings (serving size: 1 1/4 c.).
