Pennsylvania Dutch Candied Sweet Potatoes

Ingredientes

  • 10 med (4 pounds) sweet potatoes
  • 1/2 c. unsalted butter
  • 1/2 c. firmly packed brown sugar
  • 1/3 tsp salt
  • 3 Tbsp. brandy, orange juice or possibly mix of both

Direcciones

  1. Preheat oven to 350 F. Cook potatoes in water till tender. Drain and cold. Peel and cut in half lengthwise. Place in shallow baking dish large sufficient to hold one layer. Heat butter and combine with remaining ingredients, stirring till sugar is dissolved. Pour over potatoes. Bake, turning once and basting with sauce, till warm, about 20 min.
  2. Note: Potatoes and butter mix can be placed in large skillet and heated on top of stove instead of in oven.
