Receta Pennsylvania Dutch Potato Pancakes

- Grate potatoes into large bowl.
- Toss with lemon juice to coat. Let stand 5 min; drain well.
- Add in melted butter, flour, onion, scallions, egg, salt, pepper, and baking powder to potatoes; stir to mix well.
- In skillet over medium heat, heat 1 Tbsp. each butter and oil.
- In batches of 3 or possibly 4 pancakes, add in potato mix in heaping Tbsp. to skillet.
- Flatten with tines of fork. Cook 3 to 4 min on each side till golden. Drain on paper towel and keep hot in 300 degree oven.
- Repeat till mix is used up, adding butter and oil as needed.
- Serve immediately.
