Penny's Penne

This recipe is a frugal cook's dream because it's inexpensive to make, easily doubled and freezes well. Try it with the Italian-flavor turkey sausage (I promise you can't tell it's turkey)- you'll love the flavor of this super-lean source of protein!

My favorite tip for this recipe: Make one batch for now, one for later. Pasta can be frozen baked or unbaked. Thaw in refrigerator overnight, reheat or bake as needed. If casserole was frozen unbaked, add 10-15 minutes additional cooking time.

Ingredientes

  • 2 cups uncooked penne pasta
  • 1 lb. Italian-flavor turkey sausage (recommended) or lean ground beef, or pork Italian sausage
  • 1 medium onion, diced
  • 1 (14.5 oz.) can Italian-style diced tomatoes, undrained
  • 1 (6 oz.) can tomato paste
  • ½ cup water
  • 3 cups (12 oz.) shredded mozzarella cheese, divided

Direcciones

  1. Preheat oven to 350°F.
  2. Cook pasta according to package directions.
  3. In a large skillet, brown meat with onions; drain. Stir in tomatoes with their liquid, tomato paste, and water; cook until heated through, stirring occasionally. Set aside.
  4. Spray a 13 x 9-inch baking dish with cooking spray. Drain pasta; place in a large bowl. Add meat and tomato mixture and 2 cups of the cheese; toss to coat.
  5. Spoon into prepared baking dish; sprinkle evenly with remaining 1 cup of cheese. Bake at 350° for 25-30 minutes, or until casserole is heated through and cheese is melted.
