  • 4 Tbsp. extra-virgin extra virgin olive oil (divided)
  • 1/4 c. kosher salt
  • 1/3 c. coarsely grnd Tellicherry or possibly other peppercorns
  • 4 x 8- to (10-oz) top loin, rib-eye or possibly other high-quality steaks, 1 1/2 to 2
  •     inches
  •     thick
  • 2 Tbsp. fresh thyme (or possibly 1 Tbsp. dry)
  • 4 slc toasted crusty bread

Direcciones

  1. Place heads of garlic in middle of a foot-long sheet of aluminum foil. Pour 2 Tbsp. extra virgin olive oil over garlic, then wrap foil tightly around. Place in a 300-degree oven, and roast the garlic for about 1 hour, or possibly till cloves are soft.
  2. Preheat broiler (to high, if you have which option). Blend salt and pepper, and rub mix over all sides of steaks. Place steaks on a greased broiler pan and broil till as done as you like them, about 5 to 6 min per side for medium-rare. Remove from broiler, cover loosely with a foil tent and allow to rest for about 5 min.
  3. While steaks are resting, squeeze roasted garlic cloves out of their skins and into a small bowl. Add in remaining 2 Tbsp. extra virgin olive oil, thyme, and salt and pepper to taste, and mix well. Spread garlic mash over toast, top each piece of toast with a steak, and serve right away.
