Receta Pepper Strips With Gorgonzola Hummus...
This is the 4th appetizer this week - and it's another winner! Pull up the deck chairs, you're going to want to nosh on these colorful, delicious, quick and easy bites of crunchy summer!
When the mister got home last night he stormed into the nerve center and demanded to know why the windows and doors were open...it was 80 degrees out - what was I thinking?!? Why didn't I have the air on?!? I was enjoying the fresh air and told the mister to chill out - it certainly wasn't hot - it was wonderful and no button needed to be pushed! The mister immediately looked sad as he dragged his knuckles up the stairs. Now, let me back up a bit...five years ago the mister insisted on putting in an air-conditioner...and I will say for the TWO WEEKS a year that we need it, it is a life-saver...but last year we didn't run the thing once...and this year we've yet to turn it on and the mister can hardly stand it! He paid all that money for an air-conditioner than he never gets a chance to use! So picture this...the mister, flying down I-90, passing cars left and right with his one good eye on the odometer, and the other on the outside temperature gauge which is holding at a constant 80 degrees. The mister works up a sweat with anticipation...he races home so he can push the button on the thermostat while we all cheer, "Hail the Conquering Hero!" And then I burst his bubble by telling him it's not hot, we're not roasting, and we don't need the air on. Sad, no? (He's a penny-pincher when it comes to running the water but when it comes to the temp, there's no limit to the kilowatts he'll burn to keep the ice water in his veins cold!)
- Pepper Strips with Gorgonzola Hummus - Pots and Pins
- 1 small yellow bell pepper
- 1 small orange bell pepper
- 1 small red bell pepper
- 1 can (15 oz.) white beans (you can use Garbanzo beans, I just prefer white)
- juice from one large lemon
- 1/4 cup Gorgonzola cheese crumbles
- 1 teaspoon garlic, minced
- 1/2 teaspoon salt
- 1/2 teaspoon pepper
- 1/4 cup olive oil
- Italian parsley to garnish
Remove tops from peppers and seeds/membranes inside, rinse and turn upside down to drain on paper towels. In the bowl of a food processor, combine beans, lemon juice, Gorgonzola cheese, garlic, salt, pepper and olive oil. Process until smooth. (You want the hummus to be on the thick side so it will hold it's shape on the pepper strips. If it's too thick you can add a bit more olive oil.)
Cut each pepper into 10 strips. Either scoop a dollop of hummus onto each pepper strip or put hummus into a small plastic bag and snip off the end so you can easily push the hummus out onto the pepper. Garnish each pepper strip with a leaf of Italian parsley. Makes 30 appetizers. (You could also just serve the pepper strips along side a bowl of hummus...not nearly as pretty but equally as tasty!)
