Ingredientes

  • 1 x Sirloin
  • 1 tsp Butter
  • 1 tsp Oil
  • 1/4 c. Red wine
  • 1/4 c. Chopped red onion
  • 3 Tbsp. Green peppercorns
  • 1/3 c. Whipping cream
  • 1/3 c. White wine
  • 1 Tbsp. Dijon mustard
  • 1 Tbsp. Chopped parsley
  • 1 tsp Dry tarragon
  •     Salt and grnd black pepper
  •     Parsley sprigs

Direcciones

  1. Brown steak on both sides in frying pan over medium-high heat in butter-oil mix. Add in red wine to pan. Bring to boil. Reduce slightly. Remove meat to carving board. To pan add in onion, peppercorns, whipping cream. White wine, mustard, chopped parsley, tarragon, salt and black pepper. Increase heat to high and reduce sauce a few min. While sauce is cooking, slice meat diagonally. Add in meat juices to pan. Stir well. To serve: top steak slices with sauce and garnish with parsley sprigs.
