%20but%20since%20I%20don't%20have%20oyster-sauce%20in%20the%20house%20I%20decided%20to%20use%20(actually%20do)%20a%20little%20mushroom%20stock%20to%20provided%20some%20base%20umami.%3C/p%3E%3Cp%3EHer%20sauce%20required%20also%20some%20ginger%20to%20be%20added%20to%20it%20but%20the%20tiny%20rhizomes%20I%20had%20bought%20decided%20to%20disappear%20in%20the%20mess%20on%20top%20of%20my%20counter%20and%20so%20I%20forgot%20about%20it.%20At%20the%20tasting%20I%20honestly%20didn't%20find%20my%20sauce%20needed%20it%20since%20I%20used%20pomegranate%20molasses%20in%20it%20that%20provided%20some%20fruity%20sourness.%20The%20toasted%20sesame%20oil%20just%20complete%20and%20bridges%20the%20molasses%20with%20the%20peanut%20butter.%3C/p%3E%3Cp%3EMy%20idea%20was%20to%20render%20this%20dish%20a%20perfect%20St.%20Valentine's%20dinner%20option,%20I%20figured%20I%20would%20finger-paint%20a%20heart%20with%20the%20pomegranate%20molasses%20on%20the%20plate%20and%20then%20serve%20the%20dish.%20All%20dreams%20broke%20on%20the%20realization%20that%20pomegranate%20molasses%20is%20an%20unappealing%20brown%20color.%3C/p%3E%3Cp%3EThe%20dish%20is%20still%20very%20fit%20for%20St.%20Valentine%20though%20no%20red%20is%20in%20it%20(you%20can%20always%20add%20a%20tad%20of%20red%20food-coloring%20to%20the%20sauce%20to%20make%20it%20more%20appealing%20or%20scatter%20some%20pomegranate%20seeds%20over%20it).%3C/p%3E%3Cp%3EPeppered%20pork-fillet%20with%20tangy%20peanut-butter-pomegranate%20sauce%3C/p%3E%3Cp%3EIngredients%20(serve%202):%3C/p%3E%3Cp%3EMethod:%3C/p%3E%3Cp%3EIn%20a%20little%20bowl%20mix%20the%20cracked%20peppercorns%20with%20some%20salt%20and%20spread%20over%20a%20flat%20surface.%20Press%20the%20pork%20medallions%20in%20the%20pepper%20mixture%20pressing%20them%20down%20to%20coat%20properly,%20flip%20them%20over%20and%20coat%20also%20the%20other%20side.%3C/p%3E%3Cp%3ESet%20the%20pork%20aside%20while%20you%20heat-up%20a%20stainless-steel%20saut%C3%A9%20pan%20over%20medium%20fire.%3C/p%3E%3Cp%3EIn%20the%20meantime%20whisk%20%20all%20the%20sauce%20ingredients,%20except%20the%20cream,%20until%20well%20combined%20and%20set%20aside.%3C/p%3E%3Cp%3EWhen%20the%20pan%20is%20nicely%20hot,%20place%20the%20pork%20medallions%20on%20it%20and%20let%20them%20cook%20for%20a%20couple%20minutes%20until%20then%20won't%20stick%20anymore%20to%20the%20pan.%20Flip%20the%20medallions%20over%20and%20keep%20cooking%20them%20for%20another%20couple%20of%20minutes.%20Transfer%20the%20meat%20on%20a%20plate,%20cover%20with%20aluminum%20paper%20and%20set%20aside%20in%20a%20warm%20oven%20while%20you%20prepare%20the%20sauce.%3C/p%3E%3Cp%3EDeglaze%20the%20saut%C3%A9%20pan%20with%20a%20little%20hot%20water%20scraping%20clean%20its%20bottom.%20Add%20the%20pan%20juices%20to%20the%20sauce%20ingredients%20and%20whisk%20until%20well%20combined.%20Transfer%20the%20sauce%20on%20the%20pan%20(or%20a%20smaller%20saucepan)%20and%20slowly%20bring%20it%20to%20a%20simmer.%20Cook%20it%20until%20it%20will%20thicken,%20add%20then%20the%20drippings%20from%20the%20resting%20meat%20and%20the%20cream.%20Taste%20the%20sauce%20for%20seasoning.%3C/p%3E%3Cp%3ETo%20serve%20place%20a%20little%20sauce%20on%20each%20serving%20plate%20followed%20by%20the%20pork%20medallions%20and%20more%20sauce%20on%20top.%3C/p%3E%3Cp%3EThis%20dish%20is%20perfect%20served%20with%20some%20steamed%20broccoli%20seasoned%20with%20grated%20ginger%20and%20olive%20oil.%3C/p%3E){kind=link}
