- Crust: Beat flour, margarine, sugar and salt together.
- Pour 2/3 of batter in a 13 x 9 x 2 inch baking pan. Place mint pieces over the batter. Pour rest of the batter in the pan.
- Bake at 350 degrees for 10 minutes.
- Cool completely.
- Filling: Beat cream cheese, vanilla extract. peppermint schnapps and chocolate chips.
- Spread over the crust.
- Topping: Mix cool whip and red food coloring together.
- Spread over the filling layer.
- Decorate.
