%3C/p%3E%3Cp%3EI%20always%20use%20a%20free%20range,%20corn%20fed%20(if%20possible)%20chicken%20and%20I%20rub%20it%20all%20over%20with%20butter%20and%20slip%20garlic%20underneath%20the%20skin%20of%20the%20breast%20along%20with%20a%20few%20herbs.%3C/p%3E%3Cp%3EI%20squeeze%20lemon%20juice%20over%20all,%20salt%20and%20pepper%20and%20bake%20it%20on%20a%20bed%20of%20lemon%20slices.%20I%20throw%20the%20spent%20squeezed%20lemon%20into%20the%20chicken%20along%20with%20some%20more%20garlic%20and%20some%20thyme,%20and%20sometimes%20another%20knob%20of%20butter,%20some%20salt%20and%20pepper.%3C/p%3E%3Cp%3EEnd%20result%20a%20deliciously%20tasty%20and%20moist%20Roast%20Chicken,%20with%20crisp%20skin%20and%20meltingly%20tender%20meat.%20(Can%20you%20believe%20I%20have%20never%20yet%20been%20able%20to%20get%20a%20really%20tasty%20looking%20picture%20of%20Roast%20Chicken?%20I%20know!%20It%20should%20be%20so%20simple,%20but%20it's%20not!)%3C/p%3E%3Cp%3E*Lemon%20and%20Garlic%20Roast%20Chicken*%3C/p%3E%3Cp%3EServes%204%3C/p%3E%3Cp%3ENothing%20is%20more%20comforting%20than%20a%20delicious%20dinner%20of%20Roast%20Chicken%20and%20vegetables.%20Crisp%20skin%20on%20the%20outside,%20and%20succulent,%20flavourful,%20tender%20and%20juicy%20meat%20on%20the%20inside.%20This%20is%20my%20way%20of%20achieving%20just%20that.%20Lemon%20and%20Garlic%20bring%20out%20the%20best%20in%20chicken.%20The%20three%20just%20go%20together%20like%20peas%20and%20carrots!%3C/p%3E%3Cp%3E1%20medium%20sized%20roasting%20chicken,%20about%202%20kg%20in%20weight%3C/p%3E%3Cp%3E2%20unwaxed%20lemons%3C/p%3E%3Cp%3E3%20fat%20cloves%20of%20garlic,%20peeled%20and%20thinly%20sliced%3C/p%3E%3Cp%3E3%20TBS%20butter%3C/p%3E%3Cp%3E3%20sprigs%20of%20thyme%3C/p%3E%3Cp%3ESea%20Salt%20and%20cracked%20black%20pepper%20to%20taste%3C/p%3E%3Cp%3EA%20drizzle%20of%20olive%20oil%3C/p%3E%3Cp%3EPre-heat%20the%20oven%20to%20200*C/400*F.%20Take%20one%20of%20the%20lemons%20and%20slice%20very%20thinly.%20Place%20half%20of%20the%20slices%20in%20the%20bottom%20of%20a%20heavy%20roasting%20pan%20along%20with%20half%20of%20the%20sliced%20garlic.%20Set%20aside%20while%20you%20prepare%20the%20chicken.%3C/p%3E%3Cp%3EWash%20the%20chicken%20and%20pat%20it%20dry%20with%20paper%20towels.%20Season%20it%20well%20inside%20with%20salt%20and%20pepper.%20Loosen%20the%20skin%20over%20the%20chicken%20breasts%20with%20your%20fingers,%20being%20very%20careful%20not%20to%20tear%20it.%20Push%20a%20few%20slices%20of%20the%20sliced%20lemon%20in%20under%20the%20skin%20on%20each%20side%20along%20with%20some%20of%20the%20remaining%20garlic%20slices,%201%20TBS%20of%20butter%20and%20a%20sprig%20of%20thyme.%20Put%20the%20rest%20of%20the%20lemon,%20the%20last%20TBS%20of%20butter%20and%20a%20sprig%20of%20thyme%20into%20the%20cavity%20of%20the%20chicken.%20Place%20the%20whole%20chicken%20on%20top%20of%20the%20sliced%20lemon%20and%20garlic%20in%20the%20roasting%20pan.%20Dust%20the%20whole%20thing%20with%20some%20salt%20and%20pepper%20and%20drizzle%20with%20some%20olive%20oil.%20Place%20in%20the%20heated%20oven.%3C/p%3E%3Cp%3ERoast,%20uncovered%20for%20approximately%2045%20minutes%20per%20kg,%20or%20until%20the%20juices%20run%20clear%20when%20pierced%20with%20a%20fork.%20Baste%20the%20chicken%20every%20fifteen%20minutes%20after%20the%20first%20half%20hour%20has%20passed%20with%20the%20pan%20juices.%3C/p%3E%3Cp%3ERemove%20from%20the%20oven%20and%20let%20it%20sit%20to%20rest%20for%20about%2010%20to%2015%20minutes%20before%20serving.%20If%20you%20wish%20you%20can%20skim%20off%20all%20the%20fat%20from%20the%20pan%20and%20make%20a%20delicious%20gravy%20with%20the%20juices%20that%20are%20left%20behind.%3C/p%3E%3Cp%3ETo%20make%20a%20gravy:%20Skim%20off%20all%20the%20fat%20from%20the%20pan,%20except%20for%20about%202%20TBS.%20Add%20several%20TBS%20of%20flour%20to%20the%20remaining%20drippings%20and%20any%20juices%20from%20the%20chicken.%20Stir%20until%20smooth,%20and%20cook%20over%20medium%20heat%20for%20about%20a%20minute.%20Slowly%20pour%20in%202%20cups%20of%20heated%20chicken%20stock,%20stirring%20until%20it%20is%20thickened%20and%20smooth.%20Taste%20for%20seasoning.%20Serve.%3C/p%3E%3Cp%3ETo%20go%20with%20the%20Roast%20Chicken,%20along%20with%20the%20traditional%20roast%20spuds%20and%20veg%20I%20did%20a%20delicious%20Old%20Fashioned%20Pea%20Salad.%20I%20love%20this%20salad.%3C/p%3E%3Cp%3EIt's%20chock%20full%20of%20tender%20baby%20peas%20and%20crisp%20iceberg%20lettuce%20.%20.%20.%20savoury%20cheese%20and%20crispy%20bacon%20.%20.%20.%20a%20tiny%20bit%20of%20red%20onion%20.%20.%20.%3C/p%3E%3Cp%3EThe%20dressing%20is%20a%20simple%20one%20.%20.%20.%20a%20mayo%20vinaigrette,%20with%20a%20bit%20of%20a%20sweet%20and%20sour%20tang.%20It%20goes%20so%20very%20well%20on%20the%20salad.%20I%20think%20this%20is%20everyone's%20favourite%20around%20here.%20They%20always%20lick%20the%20bowl%20clean!%3C/p%3E%3Cp%3E*Old%20Fashioned%20Pea%20Salad*%3C/p%3E%3Cp%3EServes%204%3C/p%3E%3Cp%3EA%20delicious%20salad%20with%20lettuce,%20peas,%20red%20onions,%20cheese%20and%20bacon,%20all%20in%20a%20tangy%20mayo%20vinaigrette.%3C/p%3E%3Cp%3EFirst%20make%20the%20dressing.%20Whisk%20all%20of%20the%20ingredients%20together%20in%20a%20small%20bowl.%20Taste%20and%20adjust%20seasonings%20as%20required.%20Set%20aside.%3C/p%3E%3Cp%3EMix%20all%20the%20salad%20ingredients%20together%20in%20a%20bowl.%20When%20you%20are%20ready%20to%20serve,%20drizzle%20the%20dressing%20over%20top%20and%20toss.%20Serve%20immediately.%3C/p%3E){kind=link}
