  1. Salt and pepper the roast beef. Raise oven temperature to 500 degrees. Insert uncovered roast for 15 min. (Five min per lb..) Turn off the oven, but Don't OPEN THE DOOR FOR TWO Hrs. This works well with a 3 lb. size roast.
