Ingredientes

  • 2 Tbsp. Vegetable oil
  • 1 x Onion, minced
  • 1/4 tsp Turmeric
  • 1/4 tsp Grnd cinnamon
  • 1/2 c. Rice
  • 1/4 lb Dry apricots, cut into thin strips
  • 1/2 c. Minced fresh Parsley
  • 8 c. Chicken stock or possibly water
  • 1 c. Cooked chick peas
  •     Salt and pepper
  • 1/4 c. Fresh mint leaves
  • 1/2 lb Grnd lamb
  • 1/2 c. Pine nuts, toasted
  • 1/2 x Onion, minced
  • 1/2 tsp Grnd cinnamon
  • 1/4 tsp Salt
  • 1/4 tsp Freshly grnd pepper

Direcciones

  1. To make the lamb balls, mix all ingredients till well combined. Form into walnut sized balls and set aside.
  2. To make the soup, in a large pot, heat oil over medium heat. Lower heat and cook onion over low heat till golden brown , about 6 min. Stir in turmeric, cinnamon and rice. Cook rice till transluscent, about 3 min. Add in apricots, parsley and stock. Bring to a boil and add in lamb balls. Reduce heat and simmer about 20 min. Add in chick peas and cook another 5 min. Taste for salt and pepper. Serve garnished with mint leaves.
