It turns out that my new favourite thing to photograph is also my (not so new) favourite thing to eat – pizza! So I apologise for the obscene amount of photos in this post. I got a bit carried away – it’s just impossible to make pizza look ugly. As long as you’ve got a nice crispy base and plenty of cheese, you’re on to a winner.

Speaking of pizza bases: are you a base person, or a topping person? I know some people like a nice thick base, but personally I’m definitely more into the toppings. In my opinion, the base is only there to hold all the toppings together (kind of like how a tortilla chip exists for the sole purpose of getting guacamole up to mouth level). That’s why I decided to go for tortilla pizza this time – just use a thin flour tortilla instead of your usual pizza base. It’s easy, it’s fast, and there’s no faffing with a rolling pin or floured surfaces. Add your toppings, and boom. You have a pizza.

The tomato sauce is always my least favourite part of a pizza, so this time I went for pesto instead. Again, it’s super quick and easy – I didn’t even make my own pesto, although you definitely could. The whole thing was in the oven in about five minutes, and was just as satisfying to eat as one of those ridiculously expensive pizzas you get from a take away place (it kind of pains me to say that since I love those things, but it’s actually completely true).

I guess the flavours of this tortilla pizza are reminiscent of a caprese salad – mozzarella, tomatoes and basil. However this pizza has the added advantage of a few good dollops of ricotta, which totally take it to the next level. There is honestly nothing better than the combination of fragrant basil pesto with that mild, creamy ricotta, plus some sweet roasted cherry tomatoes… it’s hard to believe that something that takes just five minutes to put together could really taste this good, but it really really does.

Serves: 1-2

Ingredients

To serve: fresh herbs (optional)

Instructions

Preheat the oven to 190°C (Gas Mark 5 / 375°F).

Spread the pesto evenly across the tortilla, and sprinkle over the grated cheese. Add a few dollops of ricotta, and the halved cherry tomatoes. Season with a little salt and plenty of black pepper, and bake for 30 minutes, or until the cheese is golden brown and crispy.

Serve topped with fresh herbs if desired.
