Peter's Adzuki Bean Casserole

Ingredientes

  • 1 c. Dry adzuki beans
  • 1 tsp Extra virgin olive oil
  • 1 med Onion, minced
  • 2 x Granny Smith Apples, cored and minced (not peeled)
  • 1 med Green bell pepper, seeded & minced
  • 1 x Bay leaf
  • 1/4 tsp Basil
  • 1/2 tsp Sea salt
  • 1/2 tsp Tamari Soy sauce (more or possibly less)

Direcciones

  1. Soak dry adzuki beans in 3 c. cool water for 24 hrs Or possibly, in an emergency, use 3 c. boiled water for at least 2 hrs.
  2. Drain beans completely and boil for 45 min in 2 c. fresh water or possibly till tender.
  3. Saute/fry minced onion in 1 ts extra virgin olive oil 1 minute. Add in bell pepper, saute/fry 1 minute. Add in apple and saute/fry till onions are transluscent. Drain beans and fold in vegetables. Season with basil, sea salt and soy sauce. Oil a small casserole dish and pour in mix. Embed bay leaf into top of beans and bake at 375 F. for 45 min.
  4. Serve with rice and a little salad for a delicious and healthy meal! Tastes even better the next day!
