%20of%20scapes,%20but%20if%20you%20have%20more,%20just%20double%20or%20triple%20the%20amounts%20below%20to%20fit.%3C/p%3E%3Cp%3EAs%20usual,%20I%20was%20trying%20to%20do%20at%20least%20three%20things%20at%20once%20while%20I%20made%20these%20and%20missed%20the%20little%20note%20at%20the%20very%20bottom%20of%20the%20page%20about%20her%20preferred%20method%20of%20packing%20since%20I%20was%20slightly%20at%20a%20loss%20because%20the%20scapes%20inevitably%20end%20up%20in%20both%20straight%20and%20curly%20pieces.%20I've%20included%20it%20higher%20up%20here%20so%20that%20YOU%20won't%20miss%20it.%20And%20mine%20will%20still%20taste%20just%20as%20good%20as%20if%20I'd%20packed%20them%20more%20neatly.%3C/p%3E%3Cp%3EAlso,%20a%20note%20on%20the%20pickling%20spices%20-%20I%20included%20a%20lot%20of%20spices%20but%20you%20could%20also%20do%20this%20with%20just%20peppercorns,%20bay%20leaf%20and%20dill%20or%20coriander%20seeds%20if%20you%20don't%20have%20all%20of%20these%20things%20-%20nothing%20is%20set%20in%20stone!%3C/p%3E%3Cp%3EIn%20my%20opinion,%20the%20only%20downside%20to%20this%20(or%20any%20pickles)%20is%20the%20intensely%20vinegar-y%20smell%20that%20pervades%20your%20house%20for%20a%20few%20hours%20after%20you%20boil%20your%20brine.%20But%20it%20fades%20and%20it's%20so%20worth%20it%20once%20you%20finally%20crack%20open%20a%20jar%20of%20whatever%20you've%20made.%3C/p%3E%3Cp%3EMakes%20one%20pint%20jar%3C/p%3E%3Cp%3EIngredients%3C/p%3E%3Cp%3EDirections%3C/p%3E%3Cp%3E1.%20Trim%20the%20ends%20of%20the%20scapes,%20both%20the%20blossom%20end%20and%20the%20hard%20bit%20that%20formed%20at%20the%20original%20cut,%20and%20cut%20them%20into%20lengths%20that%20will%20fit%20in%20your%20jar.%20Prepare%20a%20small%20boiling%20water%20bath%20and%20sterilize%20a%20single%20pint%20jar,%20lid%20and%20band.%3C/p%3E%3Cp%3E2.%20Combine%20the%20vinegar,%20water%20and%20pickling%20salt%20in%20a%20pot%20and%20bring%20to%20a%20boil.%3C/p%3E%3Cp%3E3.%20Remove%20the%20jar%20from%20the%20boiling%20water%20bath,%20empty%20and%20set%20on%20a%20kitchen%20towel.%20Place%20the%20spices%20in%20the%20sterilized%20pint%20jar%20along%20with%20a%20pinch%20of%20salt.%3C/p%3E%3Cp%3E4.%20Pack%20the%20trimmed%20scapes%20into%20the%20jar.%20Note:%20since%20you'll%20be%20dealing%20with%20both%20straight%20and%20curved%20pieces,%20Marisa%20suggests%20packing%20the%20curved%20pieces%20along%20the%20sides%20of%20the%20jar%20and%20the%20straighter%20pieces%20inside%20standing%20straight%20up%20-%20kind%20of%20a%20like%20a%20curly%20log%20cabin%20look%20(or%20vice%20versa)%20-%20I%20ended%20up%20just%20putting%20mine%20all%20in%20there%20in%20no%20order%20which%20is%20also%20fine.%3C/p%3E%3Cp%3E5.%20Slowly%20pour%20the%20hot%20brine%20over%20the%20garlic%20scapes,%20leaving%201/2-inch%20headspace.%20Once%20the%20jar%20is%20full,%20tap%20the%20jar%20lightly%20to%20dislodge%20any%20air%20bubbles.%20Check%20the%20headspace%20again%20and%20add%20more%20brine%20if%20necessary.%3C/p%3E%3Cp%3E6.%20Wipe%20the%20rim,%20apply%20the%20lid%20and%20ring,%20and%20process%20in%20a%20hot%20water%20bath%20for%2010%20minutes.%20Let%20these%20pickles%20cure%20for%20at%20least%20a%20week%20before%20eating.%20Pickles%20will%20last%20for%20several%20weeks%20in%20refrigerator%20after%20initial%20seal%20is%20broken.%3C/p%3E){kind=link}
