Pico de Gallo & Happy Cinco de Mayo
I love “salsa” in any variation! Pico de gallo is a little different in that it includes lime juice-super yummy when mixed with everything else, and refreshing, too. I knew I needed tomatoes and lime juice, but then I didn’t have a recipe and just started adding stuff, which is the best way to do things sometimes and it turned out killer!! The biggest problem: jalpapeno/onion breath–ugh, good thing everyone around me was eating the same thing!!
Pico de Gallo
INGREDIENTS:
- 6 cups tomatoes-diced
- 3 limes-juiced
- 1/2 red onion-diced
- 1 jalapeno-diced small
- 2-3 cloves garlic-minced
- 1/4 cup fresh cilantro-roughly chopped
- 1 tablespoon olive oil
- salt and pepper to taste
DIRECTIONS:
Mix all ingredients together. Let sit in the refrigerator for at least 1 hour. Best to eat the day you make it, it gets a little mushy by the next day (not that I don’t eat it that way)
