%3C/p%3E%3Cp%3EThere%20was%20no%20rolling%20out%20and%20filling%20dumplings,%20or%20boiling%20them.%20%20There%20was%20no%20frying%20them%20in%20butter.%20%20%20You%20simply%20fry%20some%20onions,%20boil%20some%20lasagne%20noodles%20and%20make%20some%20mashed%20potatoes.%20The%20potatoes%20are%20mixed%20with%20cheese%20and%20some%20of%20the%20fried%20onions,%20and%20then%20layered%20with%20the%20noodles%20in%20a%20baking%20dish,%20and%20baked.%20%20It%20was%20really%20easy!%3C/p%3E%3Cp%3EThe%20recipe%20does%20make%20a%20rather%20lot%20and%20it%20says%20you%20can%20freeze%20it,%20but%20in%20all%20honesty%20.%20.%20.%20%20I%20have%20never%20liked%20the%20texture%20of%20potato%20dishes%20once%20they've%20been%20frozen.%20%20%20I%20was%20able%20to%20successfully%20cut%20the%20recipe%20down%20to%20a%20third%20the%20original%20quantity,%20serving%20only%204%20so%20that%20was%20great!%20%20We%20had%20it%20fresh%20one%20night,%20served%20up%20with%20a%20salad%20and%20then%20we%20had%20the%20leftovers%20reheated%20for%20a%20quick%20supper%20the%20day%20after%20with%20some%20vegetables.%3C/p%3E%3Cp%3EIt's%20probably%20not%20the%20healthiest%20meal%20in%20the%20world%20.%20.%20.%20mostly%20because%20of%20the%20cheese%20and%20fried%20onions%20.%20.%20.%20but%20it's%20probably%20a%20lot%20healthier%20for%20you%20than%20regular%20pierogis%20because%20you%20are%20not%20sauteeing%20anything%20but%20the%20onions%20in%20fat.%20%20%20And%20in%20fact,%20I%20cut%20the%20amount%20of%20oil%20used%20to%20fry%20the%20onions%20down%20quite%20a%20bit%20as%20well,%20only%20using%201%20TBS%20for%20the%20whole%20lot,%20which%20divided%20between%204%20servings%20would%20be%20quite%20considerably%20less.%3C/p%3E%3Cp%3EUsing%20half%20fat%20cheese%20for%20the%20filling,%20and%20low%20fat%20sour%20cream%20for%20the%20garnish%20meant%20that%20it%20wasn't%20all%20that%20bad%20for%20us.%20%20It%20was%20cheap%20to%20make,%20filling%20and%20incredibly%20tasty!%20%20We%20both%20enjoyed%20it%20very%20much%20.%20.%20.%20even%20the%20pasta%20hater%20in%20the%20house!%3C/p%3E%3Cp%3E*Pierogi%20Lasagne*%3C/p%3E%3Cp%3EServes%2012%3C/p%3E%3Cp%3EThis%20is%3C/p%3E%3Cp%3Efantastically%20delicious!%20%20It's%20also%20very%20easy%20to%20make%20and%20quite%3C/p%3E%3Cp%3Eeconomical.%20%20%20It's%20also%20quite%20easy%20to%20cut%20the%20recipe%20down.%20%20I%20cut%20it%3C/p%3E%3Cp%3Edown%20by%20a%20third%20today%20and%20it%20was%20fabulous.%3C/p%3E%3Cp%3EHeat%3C/p%3E%3Cp%3Ethe%20oil%20in%20a%20large%20skillet%20over%20medium%20heat.%20%20Add%20the%20chopped%20onions.%3C/p%3E%3Cp%3ECook,%20stirring%20occasionally,%20for%208%20to%2010%20minutes,%20until%20they%20are%20lightly%3C/p%3E%3Cp%3Ebrowned.%20%20Don't%20let%20them%20burn.%20%20Reserve%20several%20TBS%20to%20sprinkle%20over%3C/p%3E%3Cp%3Ethe%20top%20of%20the%20casserole.%20%20Stir%20the%20remainder%20into%20the%20mashed%20potatoes,%3C/p%3E%3Cp%3Ealong%20with%203/4%20of%20the%20cheddar%20cheese%20and%20the%20cream%20cheese.%20%20Taste%20and%3C/p%3E%3Cp%3Eadjust%20seasoning%20as%20desired.%3C/p%3E%3Cp%3EPreheat%20the%20oven%20to%20180*C/350*F/%20gas%20mark%204.%20%20Butter%20a%209%20by%2013%20inch%20glass%20baking%20dish.%3C/p%3E%3Cp%3ECover%3C/p%3E%3Cp%3Ethe%20bottom%20of%20the%20dish%20with%201/4%20of%20the%20noodles.%20%20Top%20with%201/3%20of%20the%3C/p%3E%3Cp%3Epotato%20mixture,%20spreading%20it%20out%20with%20a%20fork.%20%20Top%20with%20another%20fourth%3C/p%3E%3Cp%3Eof%20the%20noodles.%20%20%20Repeat%20with%201/3%20of%20the%20potatoes.%20%20Top%20with%20another%3C/p%3E%3Cp%3Efourth%20of%20the%20noodles%20and%20then%20the%20remainder%20of%20the%20potatoes.%20%20Top%20with%3C/p%3E%3Cp%3Ethe%20last%20of%20the%20lasagne%20noodles%20%20Sprinkle%20with%20the%20remainder%20of%20the%3C/p%3E%3Cp%3Echeese%20and%20sprinkle%20with%20the%20last%20of%20the%20sauteed%20onions.%3C/p%3E%3Cp%3EBake%20for%3C/p%3E%3Cp%3E25%20to%2030%20minutes,%20until%20heated%20through%20and%20golden%20brown%20on%20top.%20%20%20Let%3C/p%3E%3Cp%3Estand%205%20minutes%20before%20cutting%20into%20squares%20to%20serve.%3C/p%3E%3Cp%3EOptional:%20%20%20Garnish%20each%20serving%20with%20a%20dollop%20of%20sour%20cream.%3C/p%3E){kind=link}
