Ingredientes

  • 1 Tbsp. Oil
  • 1 sm Onion, minced
  • 2 x Garlic cloves, crushed
  • 6 Tbsp. Tomato sauce
  • 16 ounce Canned pigeon peas
  • 1 c. Uncooked rice
  • 4 Tbsp. Minced fresh parsley
  • 2 c. Water
  • 1 Tbsp. Fresh lime juice
  •     Salt, to taste
  •     Freshly grnd black pepepr to taste

Direcciones

  1. Heat the oil in a saucepan and add in the onion; simmer for 5 min. Add in the garlic and tomato sauce and cook 1 minute. Add in the peas, rice, and parsley and saute/fry 1 minute. Add in the water and lime juice and simmer, covered, for 15 min till rice is cooked. Add in salt and pepper to taste.
