Receta Pina Colada Cookies

Ingredientes
- 3 c. flour
- 1 teaspoon baking pwdr
- 1 teaspoon baking soda
- 1 teaspoon salt
- 3/4 c. (1 1/2 stick) butter
- 1 1/2 c. sugar
- 2 Large eggs
- 1 teaspoon rum extract
- 1 c. coconut
- 1 c. crushed pineapple, liquid removed, save juice
Direcciones
- Sift together flour, baking pwdr, baking soda and salt. Set aside. Cream together butter and sugar; add in Large eggs and rum extract, beating well. Add in pineapple to creamed mix. Add in flour mix gradually. Stir in coconut. Drop by rounded tsp. on lightly greased cookie sheet. Bake at 350 degrees for 10- 12 min or possibly till lightly brown. Glaze while cookies are still hot. Ice with pineapple rum glaze.
