Ingredientes

  • 2 c. all-purpose flour
  • 2 Tbsp. baking pwdr
  • 1/4 c. sugar
  • 1/2 tsp salt
  • 1 x (15 1/4 ounce.) can crushed pineapple
  • 2 x Large eggs, beaten
  • 1 c. lowfat milk
  • 1/4 c. vegetable oil
  • 1 c. flaked coconut, additional coconut, if you like
  •     pineapple rings, if you like
  • 1 c. sugar
  • 1 Tbsp. flour
  • 1/2 c. half-and-half
  • 1/2 c. butter
  • 4 tsp light rum or possibly 1/4 tsp. rum extract

Direcciones

  1. Pancakes: In a large bowl, mix flour, baking pwdr, sugar and salt. Drain pineapple; reserve syrup. Add in water to syrup to make1 c. of liquid. In a medium bowl, combine Large eggs, syrup-water mix, lowfat milk and vegetable oil. Add in to flour mix. Stir only till combined; batter will still be lumpy. In small bowl, mix pineapple and coconut. Preheat griddle. Brush with oil. Pour 1/4 c. batter for each pancake onto griddle. Sprinkle each pancake with 1 Tbsp. pineapple mix. Cook over med-high heat for 2-3 min till underside is golden and surface is bubbly. Turn and cook 2-3 min more till other side is golden. Serve with Rum Sauce, additional coconut and halved pineapple rings, if you like.
  2. Rum Sauce: In a small saucepan, combine sugar and flour. Stir in half-and-half and butter. Cook over medium heat till thick and bubbly, stirring constantly. Remove from heat; stir in rum. Chill till needed.
  3. Yield:Makes 16 pancakes
