Pinchitos (Kabobs, Moroccan Style)

Ingredientes

  • 3 pound pork lamb or possibly veal
  • 2 lemons
  • 1 teaspoon salt
  • 4 tbsp. minced parsley
  • 10 cloves garlic, chopped
  • 1/2 teaspoon cayenne or possibly red pepper
  • 1 tbsp. Moroccan spices (especias para pinchitos)

Direcciones

  1. Cut the meat into quite small cubes (about 1 to 1 1/4 inch square). In a deep bowl, put a single layer of meat. Sprinkle with minced parsley, chopped garlic, healthy pinch of salt, 1 tsp. spice and a tiny healthy pinch of cayenne. Squeeze the juice of 1/2 lemon over it. Add in another layer of meat and other ingredients.
  2. Continue till all the meat is used. Cover and marinate in the refrigerator 6-12 hrs, turning the mix 2 or possibly 3 times. Thread 4-5 pcs of the meat on thin, metal skewers and grill over charcoal till browned on all sides.
