Receta Pineapple Braised Pork Ribs
Like Thai’s the Filipino cuisine is excellent in introducing different layers of flavours and textures in its dishes. Flavours like sweet, salty, sour, spicy and sometimes bitter are delicately mixed together to create a concoction that is pleasant for your taste buds. While Thai favours more on the spicy side I guess the Filipinos tend to favour more on the salty and sweet side of things. This dish is one good example of a good combination of sweet and sour from the pineapples and savoury from the soy sauce.
Pineapple Braised Pork Ribs is not your usual Filipino dish but once in a while you will see this come out in some special occasions like family gatherings or birthdays. Making this is not that hard at all. The complexity in making them is similar to cooking tinola where you just sauté the normal garlic and onions then just wait for it to simmer and become tender. Best enjoyed with freshly cooked jasmine rice.

- 1½ kg pork ribs 1 large potato, cubed 400 g can pineapple pieces/tidbits
- 2 cups pineapple juice
1 cup chicken stock ¼ cup soy sauce ¼ cup raisins 1 thumb sized ginger, minced 1 onion, chopped 4 cloves garlic, minced fish sauce freshly ground black pepper oil
In a deep fryer deep fry the potatoes until golden brown and crisp outside. In a wok add oil then sauté garlic, onion and ginger. Add pork ribs and cook until lightly browned. Pour pineapple juice, chicken stock and soy sauce, bring to a boil then lower the heat and simmer covered for 1 hour, add water if necessary. Add the raisins and pineapples then continue to simmer for 15 more minutes. Add the potatoes, season with fish sauce and freshly ground black pepper then simmer for 5 more minutes. 3.4.3177
