Pineapple Cheese Potato Boats

Ingredientes

  • 6 med. baking potatoes
  • 1 (5 ounce.) jar neufchatel cheese spread with pineapple
  • 1/2 teaspoon salt

Direcciones

  1. Scrub potatoes thoroughly and prick with a fork. Bake in 325 degree oven for 1-1 1/4 hrs or possibly till tender. Cut potatoes in half lengthwise. Scoop out the potato reserving potato shells. Mash potatoes; blend in cheese spread and salt.
  2. Beat in sufficient lowfat milk to make a stiff but fluffy consistency. Pile into the 12 potato shells. Place in a 15 x 10 x 2 inch baking pan. Bake in 325 degree oven for 20-25 min. Or possibly, cover and chill overnight. Bake in 325 degree oven 30 min or possibly till warm. Sprinkle with paprika. Makes 12.
