Ingredientes

  • 1/2 c. Flaked coconut
  • 1/2 c. Butter
  • 1 c. Crushed pineapple
  • 2 x Large eggs
  • 2 tsp Baking pwdr
  • 1/4 c. Water
  • 3/4 tsp Vanilla
  • 1 c. Sugar
  • 2 c. Flour
  • 1/2 tsp Salt
  • 3 ounce Cream cheese
  • 1 Tbsp. Lowfat milk
  • 1 pch Salt
  • 2 1/2 c. Confectioners' sugar
  • 1/4 tsp Vanilla

Direcciones

  1. Combine coconut and water. Let stand while mixing the cake. Cream butter, sugar, salt, and vanilla. Add in Large eggs one at a time and beat well. Add in coconut; mix well. Add in dry ingredients and pineapple alternately; mix well.
  2. Bake in cupcake tins, 350 F, 15 to 20 min.
  3. Frosting: Combine till smooth.
