Ingredientes

  • 2 c. All-purpose flour
  • 1 Tbsp. Baking pwdr
  • 1/2 tsp Salt
  • 1/2 c. Sugar
  • 1/2 c. Flaked coconut
  • 1 x Egg, well beaten
  • 1/4 c. Oil
  • 1 tsp Vanilla
  • 1 can (8 ounce.) crushed pineapple, undrained
  •     Sliced almonds, optional

Direcciones

  1. Preheat oven to 400 degrees F.
  2. Stir together flour, baking pwdr, salt, sugar, and coconut. Mix egg, oil, lowfat milk, and pineapple together well. Add in this mix to dry ingredients.
  3. Stir till just moistened. Fill greased or possibly paper lined muffin pans 2/3 full. If you like, sprinkle sliced almonds over batter and press them in lightly.
  4. Bake for 20 min, or possibly till golden.
  5. Makes 12 to 14 muffins.
