Receta Pineapple Filled Cookies

- Cream shortening and sugar, add in vanilla and beaten egg.
- Sift dry ingredients together and add in alternately with lowfat milk to shortening mix. Beat till well blended.
- Refrigerate15 min before rolling.
- Roll 1/8" thick on floured board.
- Cut 2" cookies. Place 1 tsp. filling in center and place another cookie on top. Press edges together.
- Bake at 375 degrees till golden, approximately 8 to 10 min.
- FILLING: Mix all ingredients and cook, stirring constantly till thick sufficient to spread between cookies.
