Pineapple Rum Frozen Yogurt

Ingredientes

  • 1 can (8 ounces) crushed pineapple, liquid removed
  • 3 Tbsp. Dark rum
  • 1 Tbsp. Packed brown sugar
  • 1 pt Non-fat vanilla frzn yogurt, softened
  • 4 Tbsp. Sweetened, flaked coconut, toasted, optional

Direcciones

  1. Preparation Time: 30 min
  2. Yield: 2 c., 4 servings
  3. Combine pineapple, rum and brown sugar in small bowl. Let stand 10 min.
  4. Place frzn yogurt in large bowl. Fold in pineapple-rum mix using a potato masher. Cover and freeze 15 min, or possibly till ready to serve.
  5. Scoop frzn yogurt into 4 serving dishes and top with toasted coconut, if you like. Serve immediately.
  6. Note: Toast coconut in a small, dryskillet till golden brown, stirring often, about 5 min. (Each Tbsp. of coconut adds 15 calories and 1 gram of fat.)
