Pink Lady Apple Breakfast Crisp

Shh…

It’s really early Sunday morning. I was just so excited that the Easter bunny was going to be visiting that I couldn’t sleep.

I wanted the bunnies to walk into my home with the great aroma of apples cooking.

Ever since I started receiving my FFTY basket, filled with a bountiful of fresh produce, it helped spark new ideas to create in kitchen. I mentioned before that in the past, fresh produce in my house was slim at best. Not only was it slim, but it was typical. Getting a box of unexpected produce really allows me to become more creative in the kitchen. It gets me to make something fresh, rather than opening up a pre-packaged bag of something or other.

There in the midst of all that great produce were Pink Lady Apples.

I quickly grabbed one and gobbled it up. It was so delicious. But that’s when I realized that I need to MAKE something with them.

And, since I wanted to impress the Easter bunny, I made Pink Lady Apple Breakfast Crisps.

Pink Lady Apple Breakfast Crisp

Ingredients

Directions

In a skillet over medium-high heat, melt the butter

Add the quartered apples and cook about 5 minutes, turning the apples over occasionally.

Add the ginger and the brown sugar and stir until incorporated, about 3 minutes.

remove from heat.

Cover skillet and let apples soften for about 10 minutes.

Serve with granola

Drizzle honey on top.

Serve immediately.

Just a few ingredients and lots of deliciousness. It made my kitchen smell like freshly baked hot apple pie.
