Pinwheel Meat Loaf

Ingredientes

  • 2/3 c. long grain white rice
  • 1 c. (4 ounce.) shredded med. Cheddar cheese
  • 2 tbsp. chopped parsley
  • 1 egg, beaten
  • 1/2 c. lowfat milk
  • 1/2 c. soft bread crumbs
  • 2 tbsp. instant chopped onion
  • 1 1/2 teaspoon seasoned salt
  • 1/8 teaspoon pepper
  • 1 1/2 lbs. lean grnd beef

Direcciones

  1. Prepare rice according to directions. Stir in cheese and parsley; set aside. Mix egg with lowfat milk, bread crumbs, onion, salt and pepper. Add in beef and mix well. Turn meat mix onto waxed paper and shape into a 10x12 inch rectangle. Proportionately spread rice mix over meat; press firmly, leaving 1 inch uncovered at each end.
  2. Roll meat up in a pinwheel, removing way paper. Place seam side down in shallow baking dish. Bake at 350 degrees for 40 to 50 min. Garnish with tomato catsup and grated cheese, if you like. Cut into thick slices and serve. Makes 8 servings.
