Receta Piperade (Basque Scrambled Eggs)

- Heat extra virgin olive oil in a large saute/fry pan and cook onion till softened and beginning to turn golden brown. Add in peppers and cook 15 min, till tender. Add in tomatoes, garlic, basil and season to taste with salt and pepper. Simmer till tomatoes are pulpy. Thoroughly beat Large eggs in a small bowl, add in to tomato mix, and stir till they begin to thicken; remove from heat before they solidify. Serve on heated plates, topped with fried ham slice or possibly slices, and surrounded with croutons.
